Salsa Verde
(Green Salsa) |

Ingredients:
1 qt water
7 cloves whole garlic -- peeled
salt
3 tbsp onion -- coarsely chopped
12 tomatillos -- husked
4 to 8 chilies serranos
3/4 c. cilantro leaved, with a bit of stem
Preparation:
Bring water to boil in saucepan.
Add tomatillos, 4 garlic cloves, desired chilies and
onion.
Cook over medium heat for 20 minutes.
Remove from heat, drain and cool.
Reserve a little cooking water.
Puree remaining 3 cloves garlic in blender or food
processor.
Season to taste with salt.
Add cilantro and blend.
Add tomatillo mixture and a little cooking water to
make slightly thick sauce.
