Bodfish Bob's Southern Fried Potatoes

Ingredients:

5 to 6 med red potatoes, peeled, diced, rinsed and drained
1 med onion, diced
1/14 c. green bell peppers, diced (optional)
1 tsp seasoned salt or regular salt
1 tsp black pepper
1/4 c. vegetable oil for frying

Preparation:

Heat the oil in a medium non-stick skillet.

Combine potatoes, onions, bell peppers in a large bowl.

Slowly add to skillet.

Sprinkle with salt and pepper.

Cover and cook over medium low heat for 10 minutes without stirring.

With a spatula turn potatoes and cook an additional 15 to 20 minutes,
stirring occasionally until potatoes are tender.
